Grain-Free Pumpkin Bread


This bread is absolutely scrumptious! It is super high in fibre as well as monounsaturated fats. It is also 100% grain and gluten free so it is perfect for everyone at any occasion. It can be toasted and used like normal bread for melts or to have with scrambled eggs and bacon (yum!) but I personally think it is best fresh out of the oven with a great big slab of butter on top and nothing else. Don't even try and use it to make a sandwich - it's too moist and sweet for that. I say sweet because there is a perfect amount of natural sweetness that comes from the pumpkin and coconut milk. Feel free to use a little more coconut milk, or sub for coconut cream, if you are having trouble blending up the pumpkin into a smooth puree. You may like to add chia, pumpkin and/or sunflower seeds on top to accentuate the crust that forms (this is the best part!).
