Cauliflower Rice


Rice is a grain that has a high amount of carbohydrate for its weight. One cup of cooked rice has around 45 grams of dietary carbohydrate, which can be far too much for a person with carbohydrate-intolerance (e.g., insulin resistance, diabetes) to healthily metabolise. However, rice is a staple food in many of our homes and it is regularly enjoyed with stir-fry and curry dishes.

In addition, the Australian recommendations for vegetable intake are 5 serves a day (1/2 cup cooked veg = 1 serve). Most Australians are not meeting this recommendation and are likely to be lacking in some micronutrients, antioxidants and fibre as a result.

Cauliflower rice is the answer! Cauliflower is a non-starchy vegetable, meaning it has a low carbohydrate content per weight, with just 5 grams of dietary carbohydrate in one cup (cooked). Try replacing at least half of your rice with cauliflower rice for a change, and enjoy the benefits of eating more vegetables and avoid excessive carbohydrate!
